I had to snap a photo of this yesterday morning before I devoured it. It is, quite possibly, one of the most delicious musubis I have ever had & definitely the best tofu musubi I have ever seen & tasted.
These days, my meals are predominantly vegan so there has been a bit of adjusting to do. It has all been positive, including a great joy to get back into the kitchen for cooking & baking, an excitement I have not really had for years.
But yesterday morning, this was all the creation of my husband who, though not vegan, knows how to handle tofu, seaweed & rice pretty darn well!
