
I went to Zengården this month to see and photograph the center- a converted old schoolhouse in the Swedish countryside- and meet members of the community.
Lunch was so delicious (and eaten in silence). Their kitchen is entirely vegan & plant-based & in Zen tradition, also an important space for practice.
Lunch was quinoa salad with baked sweet potato, carrots, beetroot, raw bell peppers and toasted walnuts with avocado on the side with a green dressing made of avocado, parsley, chives and apple cider vinegar.
