When it comes to leftovers, I personally suspect there are two kinds of people- those who like them & those who don’t. I am of the former. Today I put together leftovers from two dishes I made the past couple of days & the result elevated the two into one wonderful dish & savory experience. Yesterday’s “Changing Seasons Tomato Turmeric Soup” was a blend of 3 peeled Tomatoes, a 1/2 clove Garlic, Sea Salt, Black Pepper, Turmeric & a can of Organic Coconut Milk. Today I poured it over the last slices of my recent “Deluxe Weekend Lasagna” which included layers of a Tofu & Basil Spread, Spinach, Tomato Sauce & Beyond Meat‘s “Feisty Crumble.” A few sprigs of fresh Parsley from the garden for a nice bright green kick & the resulting dish was lusciously delicious.
